Under the water, the lotus has long roots called rhizomes (but most people just say lotus roots). They’re crunchy and have a mild, earthy flavor. You can find them in soups, stir-fries, pickles, and even chips! They help with digestion, skin health, and are full of vitamin C and potassium.
